Tasting Notes & Pairings

It starts slightly dry and moves to a subdued sour middle with a nice, slightly yeasty finish. Really nice balance of sweet and tart on the palette. Flavours of wood, smoke and leather are not overpowering, but are a nice complement to the gentle apple flavour. Pairs well with a wide range of meats, cheeses, and vegetarian dishes. Particularly more pungent or smoky flavors.
