Chardonnay & Savignin
The Belemnites cuvee is a blend of Savagnin and Chardonnay planted in marl soils made in the signature ouillé (topped-up) style of Peggy and Jean-Pascal Buronfosse. Like all of their wines, it is absolutely natural with native yeast fermentation, no fining or filtration, and zero sulfur added. It spends 18 months in neutral oak barrel which, gives it a richness to balance all the tangy, salty minerals at its core. It is lush and tropical yet structured enough that it’s a serious contender for short-term aging, and it is absolutely delicious to drink now.
